A wide variety of vegetarian cookery classes run by Vegify at Little Brampton Barn are proving extremely popular and regularly sell out.

Courses offered by the cookery school range from Asian Fusion to Middle Eastern Mezze and Simply Spanish, from Italian to Indian, and are suitable for all levels of cooking ability – from the complete novice to the competent cook.

On the Asian Fusion course, participants will learn to cook a medley of dishes from around South Asia, working together to create a three-course meal, taking inspiration from Korean, Thai, Vietnamese and Sri Lankan cuisines.

The Indian course focuses on some of the more traditional dishes cooked in Indian family homes, with participants creating dishes to serve in a traditional thali.

A Spanish-inspired tapas menu is the focus of Vegify's Simply Spanish evening – croquetas, patatas bravas and authentic Spanish chickpea and spinach stew, finishing with a dessert such as crema Catalana or a rich chocolate mousse.

Vegify also offer a class featuring vegan cookery, with dishes ranging from snacks to main courses and sweet treats.

At the end of all the classes, everyone sits down to eat the food they've created.

Many of Vegify's classes run in the evenings, starting with a demonstration and hands-on cooking from 6.15pm, with cooks sitting down to eat their prepared dishes at 8.30pm.

Every course is designed for working in pairs, with a maximum of four pairs per session. All ingredients, equipment, aprons and refreshments are provided.
